Can you tell whether a recipe will work before you cook it? You can if you really know what's cooking. In the long-awaited CookWise, food sleuth Shirley... Corriher tells you how and why things happen in cooking. When you know how to estimate the right amount of baking powder, you can tell by looking at the recipe that the cake is overleavened and may fall. When you know that too little liquid for the amount of chocolate in a recipe can cause the chocolate to seize and become a solid grainy mass, you can spot chocolate truffle recipes that will be a disaster. And, in both cases, you know exactly how to "fix" the recipe. Knowing how ingredients work, individually and in combination, will not only make you more aware of the cooking process, but transform you into a confident and exceptional cook -- a cook who is in control.CookWise is a different kind of cookbook. There are over 230 outstanding recipes -- from Snapper Fingers with Smoked Pepper Tartar Sauce to Chocolate Stonehenge Slabs with Cappuccino Mousse -- but here each recipe serves not only to please the palate but to demonstrate the roles of ingredients and techniques. A What This Recipe Shows section summarizes the special cooking points being demonstrated in each recipe. This little bit of science in everyday language indicates which steps or ingredients are vital and cannot be omitted without consequences.Among the recipes you'll also find some surprises. Don't be afraid of a vinaigrette prepared without vinegar or a high-egg-white, crisp pâte â choux. Many of the concepts used here are Shirley's own. Try her method of sprinkling croissant or puff pastry dough with ice water before folding to keep it soft and easy to roll.CookWise covers everything from the rise and fall of cakes, through unscrambling the powers of eggs and why red cabbage turns blue during cooking but red peppers don't, to the essential role of crystals in making fudge. Want to learn about what makes a crust flaky? Try the Big-Chunk Fresh Apple Pie in Flaky cheese Crust. Discover for yourself what brining does to poultry in Juicy Roast Chicken. No matter what your cooking level, you'll find CookWise a revelation. Different people will use CookWise in different ways:Home cooks will value CookWise as a collection of extraordinarily good recipes. The busy chef can use CookWise as a reference book to look up and solve problems. Major headings are shown in the Contents and 42 At-a-Glance summary charts make problem solving quick and easyBeginning cooks can use CookWise as a howto book with easy-to-follow recipes that produce dishes looking and tasting like the work of an experienced chef.Food writers and test-kitchen chefs who are developing recipes can find the formulas and tips for successful recipes,Anyone who wants to improve a recipe can use CookWise as a guide. Here is how to make cakes moister, a pate A choux drier and crisper, a dish lighter or darker in color; how to make muffins peak better, cookies spread less, or a roast chicken juicier.Everyone who cooks needs to be able to spot bad recipes and save the time, money, and frustration that they cause. Many of the At-a-Glance charts point out specific problems.CookWise is not only informative, it's engrossing, and many sections react like a mystery story. The knowledge you gain from its pages will transform you, too, into a food sleuth, an informed and assured cook who can track down why sauces curdle or why the muffins were dry -- a cook who will never prepare a failed recipe again!

'Coolhunting' and 'swarm creativity' are powerful concepts about identifying emerging trends and discovering the key trendsetters. They are about... uncovering hidden innovation and innovators and they include the how and why new ideas and new knowledge are converted into products and services that correspond to the collective human mindset. Coolhunting involves making observations and predictions as part of the search for cutting-edge trends. It is a way of capturing what the 'collective mind' is thinking, and using what is captured to one's advantage. For an example of this 'collective mind' concept, on the television show "Who Wants to be a Millionaire?", contestants unsure of the answer to a question had the option of asking the audience or phoning a so-called 'expert'. Far more often than did the experts, the collective intelligence of the audience produced the correct answer. This is a simple example of swarm creativity. Humans swarm around like-minded people, with whom they not only feel comfortable but also can collaborate to produce winning ideas. The volume includes sidebars that expand concepts and present engaging anecdotes, as well as illustrations (charts, graphs, tables, and pictures) to help guide the reader through the explanations of concepts or simply to make for a more enjoyable read. The book includes many examples from history and from more recent business cases. Some of the examples are: how the CEO of Continental Airlines, participating in an online forum of frequent flyers, brought 200 of these people together in Houston at a dinner to discuss how the company could improve its services; how 10 research labs, collaborating globally to discover the causes of the SARS disease, were able to share newly acquired knowledge and achieve tremendous results very quickly; and, how Linux, an organization with no one officially in charge, became the only serious contender to the strictly hierarchical organization that developed Microsoft Windows.

How did thousands of Chinese migrants end up working alongside African Americans in Louisiana after the Civil War? With the stories of these workers, ... Coolies and Cane advances an interpretation of emancipation that moves beyond U.S. borders and the black-white racial dynamic. Tracing American ideas of Asian labor to the sugar plantations of the Caribbean, Moon-Ho Jung argues that the racial formation of "coolies" in American culture and law played a pivotal role in reconstructing concepts of race, nation, and citizenship in the United States.Jung examines how coolies appeared in major U.S. political debates on race, labor, and immigration between the 1830s and 1880s. He finds that racial notions of coolies were articulated in many, often contradictory, ways. They could mark the progress of freedom; they could also symbolize the barbarism of slavery. Welcomed and rejected as neither black nor white, coolies emerged recurrently as both the salvation of the fracturing and reuniting nation and the scourge of American civilization.Based on extensive archival research, this study makes sense of these contradictions to reveal how American impulses to recruit and exclude coolies enabled and justified a series of historical transitions: from slave-trade laws to racially coded immigration laws, from a slaveholding nation to a "nation of immigrants," and from a continental empire of manifest destiny to a liberating empire across the seas.Combining political, cultural, and social history, Coolies and Cane is a compelling study of race, Reconstruction, and Asian American history.

Bjorn Lomborg argues that many of the elaborate and staggeringly expensive actions now being considered to meet the challenges of global warming... ultimately will have little impact on the world’s temperature. He suggests that rather than focusing on ineffective solutions that will cost us trillions of dollars over the coming decades, we should be looking for smarter, more cost-effective approaches (such as massively increasing our commitment to green energy R&D) that will allow us to deal not only with climate change but also with other pressing global concerns, such as malaria and HIV/AIDS. And he considers why and how this debate has fostered an atmosphere in which dissenters are immediately demonized.

Society has gone crazy about risk. The word itself – ‘risk’ – appears in print with amazing regularity. It crops up in conversation all the... time. And yet, few people really understand risk. Cool Risk explores the subject of risk in language you can understand. There is no jargon and no mathematics. The easy-going style is spiced with anecdotes, cartoons and limericks. Psychological studies and the latest brain research have started to explain how and why human beings have difficulty with risk. There is plenty of evidence that worry, and other over-reactions to fear, stop people from taking risks that could improve their lives. But it doesn’t have to be like that. Cool Risk offers to lead you on an enjoyable quest for a less fearful – and, yes, happier – approach to life. Start now.

Cool Rules introduces the reader to a new cultural category. While the authors do not claim to have discovered Cool, they believe they are the first to... attempt a serious, systematic analysis of Cool's history, psychology, and importance. The contemporary Cool attitude is barely 50 years old, but its roots are older than that. Cool Rules traces Cool's ancient origins in European, Asian, and African cultures, its prominence in the African-American jazz scene of the 1940s, and its pivotal position within the radical subcultures of the 1950s and '60s. Pountain and Robins examine various art movements, music, cinema, and literature, moving from the dandies and flâneurs of the eighteenth and nineteenth centuries through to the expropriation of a whole cultural and psychological tradition by the media in the 1980s and '90s. What began as a rebellious posture adopted by minorities mutated to become mainstream itself. Cool is now primarily about consumption, as cynical advertisers have seized on it to create a constantly updated bricolage of styles and entertainments designed to affect the way people think about themselves and their society.
